Mini Pineapple Upside-Down Cake Recipe | Bite into a taste of the tropics this muffin tin treat. Fun and easy to make and a great dessert for family gatherings.

Ingredients:

Topping:
  • 1 can pineapple rings
  • 6 maraschino cherries
  • 1/2 stick of butter (4 Tbsp)
  • 2/3 cup brown sugar (packed)

Cake:
  • 2 eggs
  • 2/3 cup sugar
  • 4 Tbsp pineapple juice
  • 2/3 cup all purpose flour
  • 1 tsp baking powder
  • Pinch of salt
  • I used a 6-Cup Jumbo Muffin Pan
